We produce it in the pine forests of Halkidiki and Thassos during the months of August and September. It is rich in minerals and does not crystallize quickly, since its natural glucose content is low.
When the weather is wet during the honey collection period, the pine trees are covered by the sea breeze and the honey has the smell of the sea.
According to research recently published in the Journal of Microbiology, Biotechnology and Food Sciences, which compared 18 varieties of honey, they found that Greek organic pine honey had the strongest antibacterial properties among all the honeys tested. They were found to exert antibacterial activity against E coli, S. marcescens, B sphaericus, S. epidermidis, and B subtilis.
